Sausage Corn Chowder Great Soup for a cold day!



Sausage Corn Chowder


  • Prep time: 15 minutes
  • Cook time: 25 minutes
  • Serves: Makes 4 servings

I used the fresh corn we froze this summer.  It was yummy!
Ingredients
  • 2 tablespoons butter
  • 1 pound smoked sausage cut into small pieces
  • 1 cup diced onions
  • 5 carrots, cut into small pieces
  • 2 tablespoons all-purpose flour
  • 4 cups milk
  • 1 cans sweet cream style corn (15 oz each)
  • 4 cups corn
  • 1/4 teaspoon garlic powder
  • Salt & black pepper to taste
  • 3 teaspoons sliced green scallions (optional)
  • Mashed potato flakes to thicken as desired
Directions
Over medium-high heat, sauté onions in butter, then add sausage and carrots.  Cook through and remove from pan, leaving butter. Add flour, stir well into mixture and cook 5-6 minutes. Add milk and combine with sausage and carrot mixture. Add corn and simmer for 20-25 minutes until base thickens. Add garlic powder, salt and pepper. Garnish with scallions on top in soup bowl. Refrigerate leftovers.

  1. I like the short prep time, and it sounds delicious! It isn't cold here, but I still like soup!
