Sausage Corn Chowder

- Serves: Makes 4 servings
I used the fresh corn we froze this
summer. It was yummy!
Ingredients
- 2 tablespoons butter
- 1 pound smoked sausage cut into small pieces
- 1 cup diced onions
- 5 carrots, cut into small pieces
- 2 tablespoons all-purpose flour
- 4 cups milk
- 1 cans sweet cream style corn (15 oz each)
- 4 cups corn
- 1/4 teaspoon garlic powder
- Salt & black pepper to taste
- 3 teaspoons sliced green scallions (optional)
- Mashed potato flakes to thicken as desired
Directions
Over medium-high heat, sauté onions in butter,
then add sausage and carrots. Cook through and remove from pan, leaving butter. Add flour, stir well into mixture and cook 5-6
minutes. Add milk and combine with sausage and carrot mixture. Add corn and simmer for
20-25 minutes until base thickens. Add garlic powder, salt and pepper. Garnish
with scallions on top in soup bowl. Refrigerate leftovers.
I like the short prep time, and it sounds delicious! It isn't cold here, but I still like soup!
